Juliet’s stir fry

This is the stir-fry that our friend Juliet has cooked for us a couple of times from Sophie Dahl’s book “Miss Dahl’s Voluptuous Delights”.

It seems like a good way to use some of the summer vegetables currently growing on the vegetable plot (mangetout, courgettes, beans, etc.).

INGREDIENTS:
1 cup shredded cabbage
1 cup grated carrot
1 cup grated courgette
1 cup mangetout peas
1/2 cup onion, roughly chopped
2 tablspoons soy sauce
1 teaspoon cider vinegar
fresh coriander, chopped

Heat some sunflower/groundnut oil in a wok or frying pan and add the cabbage. Cook gently for about 10 minutes until cooked. Turn up the heat, add the vegetables and mix well. Add the soy sauce and vinegar and toss well. Serve
