PRAWN AND GARLIC PASTA

This prawn and garlic pasta dish is easy to prepare and takes about 15 minutes to make.

INGREDIENTS

  • spaghetti or linguine
  • 360g frozen prawns
  • 4 cloves of garlic, finely chopped
  • a bunch of parsley with the leaves and stalks, finely chopped
  • 1 small tin of anchovies, finely chopped
  • a pinch of chilli powder
  • a can of tomatoes or 500g cherry tomatoes
  • extra virgin olive oil
  • salt and pepper
  • 1 glass of white wine
  • 2 tablespoons tomato sauce

METHOD

  1. Heat the water for the pasta in a large saucepan with a teaspoon of salt.
  2. Heat 1/4 cup of olive oil in a large, deep frying pan.
  3. Add the garlic, parsley and anchovies and grind in some black pepper.
  4. Fry for a couple of minutes and then add the tomatoes and tomato sauce and mash well to break up the tomatoes.
  5. Add a splash of white wine and a knob of butter.
  6. When the pasta is cooked, transfer to a colander, saving back some of the cooking liquid.
  7. Put the pasta into the frying pan and mix well.
  8. Serve with grated Parmesan cheese.

Spinach and Ricotta Pasta

We’ve been fairly self-sufficient recently in terms of green vegetables and the broccoli, cabbage, cauliflower and Brussel spouts have kept us going through the winter months. The other day, I spotted some perpetual spinach and so thought I would do something different with it. Here is a recipe for pasta with spinach and ricotta. I used wholewheat macaroni but you could use anything.

SPINACH AND RICOTTA PASTA

INGREDIENTS

  • 200g pasta
  • 200g ricotta
  • fresh spinach
  • salt and pepper
  • cheddar or parmesan cheese, grated
  • extra virgin olive oil

METHOD

  1. Heat some salted water for the pasta.
  2. Wilt the spinach in a frying pan with a splash of water.
  3. Roughly chop the spinach.
  4. Cook the pasta.
  5. Heat some oil and a knob of butter in a frying pan and gently fry the garlic.
  6. Add the spinach, the ricotta and season with salt and pepper.
  7. Using a slotted spoon, transfer the pasta to the frying pan and mix well.
  8. Add some more of the pasta cooking liquid if necessary.
  9. Serve and sprinkle with grated cheese.

Pasta with tuna and tomato sauce

pasta with tuna and tomato sauceYou can make this recipe with any type of pasta: spaghetti, noodles, fettucine, macaroni, etc. The measurements are approximate and really depend on the number you are cooking for.

INGREDIENTS:
pasta
1 x 400g can chopped tomatoes
3 cloves garlic, finely chopped
1 can tuna
1 tablspoon capers, chopped
1 small can black olives, stoned and chopped
2 tablespoons tomato purée
olive oil
salt and pepper

METHOD:
Cook the pasta in boiling, salted water.

Meanwhile heat some olive oil in and gently fry the garlic until soft.

Add the chilli and stir-fry for a while before adding the tuna, chopped tomatoes and tomato purée. Season with salt and pepper. Bring to the boil and then cover and leave to simmer until the pasta is cooked.

Drain the pasta and tip into the saucepan, stirring well to combine all the flavours.
