The grapes are crushed in the wine press. There is a steady flow of wine into the bucket. When the bucket is nearly full someone must take the bucket and empty it into a much bigger recipient. The raw grape juice is called "must". We take a reading using a refractometer which will tell us how much sugar is in the wine. The more sugar the more alcohol. The wines we make at Cortijo de la Plata are normally fairly strong at over 13% by volume. We have an abundance of sun and there is not a lot of rain.
