During the summer when the beans are in full production, it’s good to try out new recipes as you can have too much of the same thing. This was a tweaked recipe. You can either slice the beans by hand or Lakeland sell a handy Krisk bean slicer which both strings and slices the beans in a fraction of the time.
INGREDIENTS:
handful green beans, sliced lengthways
1 red onion, finely chopped
1 heaped teaspoon grain mustard
lemon juice
2 tablespoons olive oil
pinch of chilli powder
salt and pepper
Cook the beans in boiling water for 3 minutes and drain. Mix with onion, squeeze of lemon juice, mustard, chilli powder, olive oil and season with salt and pepper.
